Food Storage recipes

Had the opportunity to take this cuteness (forgive the wind blown hair and cracker on her lip)
 to the Zoo in Salt Lake not long ago.
Excuse the side track...
 
While in the Salt Lake, we took the opportunity to visit the Church Distribution Center.
That is where I picked up 11 free recipes using Food Storage.
 Isn't that exciting?!!
I thought so, now I want to share them with you!
 
There are:
5 using Wheat
2 with Rice
2 with Pinto Beans
2 with Oats
 
 
Here are a few to try, with more to come later.
 
Blender Pancakes
 
1 c. wheat
1 1/2 c. milk  (Think powder milk!)
1 egg
3 T. sugar
1 t. salt
1 T. baking powder
2 T. oil
 
Directions:
Combine wheat and 1 cup of milk in blender. Blend on high for 1 minute. Add remaining ingredients and blend until smooth. Cook on hot griddle. Serve with favorite topping.
 
Yields: 6-8 servings
 
Here is another breakfast idea using your Wheat...
 
Whole Wheat Cereal
 
1/2 C. Whole Wheat Kernels
2 C. boiling water
 
Directions:
In a small grinder, put 1/2 c. Whole Wheat. Grind until fine.
Bring 2 cups of water to a boil. Pour in the ground wheat. Turn heat down a bit so it does not boil over. Cook and stir constantly for 10 minutes. Pour into bowl and add a little sugar and milk. Serve and eat.
 
Yields: 2 servings.
 
LOVE these Whole Wheat Muffins
 
2 C. Whole Wheat Flour
3 T. Vegetable Oil
3 1/2 t. baking powder
1/2 C. Honey
1/2 t. salt
1 1/2 C. Milk
1/2 C. Raisins
 
Directions:
Mix ingredients together with minimal mixing. Fill well oiled muffin pans 2/3 full.
Bake at 350 degrees for 20-25 minutes.
 
Yields: 1 dozen
 
Instant Oatmeal packets
 
Directions: In a snack size baggie, put 1/2 cup quick oats with any of the following:
 
Raisin and Brown Sugar
1 T. packed brown sugar, 1 T. raisins 
 
or
 
Apple Cinnamon
1 T. packed brown sugar, 1/4 t. cinnamon, 2 T. dried apples, chopped.
 
or
 
 Cinnamon Spice
1 T. packed brown sugar, 1/4 t. cinnamon, 1/8 t. nutmeg
 
To enjoy each mix, add 3/4 water. Microwave 1 minute. Stir and serve.

Breakfast on the GO

One Saturday morning I got a little creative with
 Breakfast.

On weekdays I don't get up early enough to eat a decent breakfast. (I know, breakfast is the most important meal of the day...but my beauty sleep is more important:)

This is what I gathered...

pancake mix: The just add water kind, plus it has at least a years expiration. Perfect for short term storage.

Chocolate chips: A must have in your my storage!

Blueberries: My husband eats them every morning in his oatmeal. So I best be having them stored up in the freezer at least.

Sausage: I had some in the freezer, but I have bottled some as well.


 
 Just mix up the pancake mix with water as directed on the package. Then I poured some into the muffin tins (I sprayed the tins first with some cooking spray).
Then I took a sausage and cut one up into a tin, then added some blueberries into some others (not together in the same muffin).
Then I topped off the muffin tins with more pancake mix to cover the add ins.

 
 I should have followed the same instructions for the chocolate chip ones. I sprinkled the chips on top so I would be able to recognize which was which. Not a smart move. They were too melty on top and didn't store as easily, because the chocolate chips got all over the baggies. Adding them to the center would have been smarter.

 
 This is the finished product as they came out of the oven.
Remember they are pancakes, so they will not brown up like a cupcake or muffin.
 

These were my favorite! The sausage was a nice treat.



 Disclaimer: If you eat these thinking to yourself. Yum muffins...No they wont be Yum at all.

They are pancakes, so they will not taste like muffins.
But still good. I have taken them in the morning on the go and enjoyed them.

If you were to serve them at home and not on the go, then offering some pancake syrup to dip in would be the Perfect touch!

Homemade Mixes

I proudly announce that I am Dutch. I have grandparents who both immigrated to America from Holland.
 
So besides being somewhat cheap, tight...Provident.
I really am Dutch. I can even speak a few words. At least the important ones that my grandpa taught me many, many, many years ago.
In case you were wondering what those words were....
 
"I am a member of the church of Jesus Christ Of Latter Day Saints!"
Cool huh?!!
 
So it is with Great pleasure I provide a few everyday Mixes that can be made to save you money. Not to mention the health benefits. When you make it yourself, you know exactly what goes into it.

Homemade Ranch Dressing Seasoning Mix

Ingredients

  • 2 Tbsp dried parsley
  • 1 tsp dried dill
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried basil
  • 1/2 tsp pepper

Directions

  • Add each of the dried spices to a bowl and gently stir.
  • Store in a resealable plastic baggie or small ball canning jar with tight fitting lid in your spice cabinet.
  • To make the ranch dressing, whisk together 1/3 cup mayonaisse with 1/4 cup milk (more or less depending on the consistency you want) with 1 Tbsp of the homemade ranch dressing seasoning mix. Season with salt, to taste. Use immediately and can refrigerate for up to 3 days.
  • Makes about 4 Tbsp worth of mix. Or use the ratios above and mix up however much you’ll need!

Homemade Taco Seasoning

Ingredients

  • 1 part chili powder
  • 1 part ground cumin
  • 1 part garlic powder
  • 1 part onion powder
  • 1/4 – 1/2 part crushed red pepper

Directions

  1. Mix all the spices together and store in an airtight container. Can be stored in the freezer!
  2. Use sparingly. Or liberally!

Homemade Onion Soup Mix

Yield – 1 packet worth

Ingredients

  • 4 teaspoons beef bouillon granules
  • 3 tablespoons dried onion flakes
  • 2 teaspoons onion powder
  • 1/2 t garlic powder
  • 1/4 teaspoon pepper

Directions

  • Stir ingredients together. If beef granules are too large, simply put them in a small baggie and roll over them with a rolling pin until they resemble a fine powder.
  • Store in an airtight container in the pantry, or in the freezer.

Homemade Pumpkin Pie Spice

Yield – almost 3 Tablespoons
Ingredients
  • 1 1/2 Tbsp cinnamon
  • 1 tsp ground ginger
  • 1 tsp ground cloves
  • 1 tsp allspice
  • 1 tsp nutmeg
  • Place all ingredients in small, sealable container and mix together. Use as directed in recipes that call for pumpkin pie spice.
  • Store in a dry place, up to 6 months.

Homemade Apple Pie Spice

Yield – 4 servings

Ingredients

  • 1 Tbsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp allspice
  • 1/2 tsp ground cloves
  • Dash of cardamom (optional)

Directions

  • Place all ingredients in small, sealable container and mix together. Use as directed in recipes that call for apple pie spice.
  • Store in a dry place, up to 6 months

Hot Chocolate


To Die For Hot Chocolate Recipe

Hot Chocolate anyone?

I was ready for a cup of hot chocolate and found that my cupboard was bare. I was determined to make it myself this year.
 There were too many distractions at the time, so we loaded our cart with a few yummy sounding flavors while at the store.
After we opened the can, we were shocked to see that it was only about 1/2 way full. Crazy marketing ploy. Large can on the outside, nothing on the inside.

So off to the Internet to see how it is done. Here are a few that might interest you. I know I am going to whip some up real soon. Those 1/2 full or 1/2 empty cans (however you see the cup) are almost empty for reals.

Homemade Flavored Hot Cocoa Mix

  • 1 1/2 cups powdered milk
  • 1 cup powdered sugar
  • 1 cup dutch processed cocoa ( or use Hershey's special dark cocoa, I have also used 1/2 baking cocoa and 1/2 dutch processed, but it works best with at least 1/2 dutch processed cocoa because it gives it a richer taste.)
  • 1 cup chocolate chips
  • 1/8 teaspoon salt
Mix all ingredients together in a food processor and mix until chips are finely chopped. Depending on the size of your food processor you may have to do a few batches. (I think this also could be done in a couple of batches in a blender.)
To serve you can do this two ways:
4 to 5 tablespoons hot chocolate mix with 1 cup hot water
Or for a creamier hot chocolate: Mix 3 to 4 tablespoons hot chocolate mix with 1 cup of milk. (This is my favorite way to drink it)

For the variations:

Homemade Butterscotch Hot Cocoa: Substitute butterscotch chips for the chocolate chips.
Homemade Mint Hot Cocoa: Substitute Andes mints for the chocolate chips
Homemade Cinnamon Hot Cocoa: Substitute cinnamon chips for the chocolate chips.
Homemade Dark Chocolate Hot Cocoa: Substitute special dark chips for the chocolate chips.

Hot Cocoa Mix
4 cups nonfat dry milk powder
1 1/2 cups sugar
1 cup non-dairy coffee creamer
2/3 cup unsweetened cocoa powder
1 (4 ounce) package instant chocolate fudge pudding

Mix all the ingredients together in a large bowl. If a finer consistency is desired, you can pour the mix into a blender or food processor and run it through that. Store in an airtight container. Add 1/4 to 1/2 cup (depending on your cocoa preference) of the mix to an 8 ounce mug of boiling water.

Creamy Crock pot Hot Cocoa 
Ingredients:
  • 1.5 cups whipping cream
  • 1 14oz can sweetened condensed milk
  • 6 cups milk
  • 1 teaspoon vanilla
  • 2 cups of milk chocolate chips

Instructions:
Stir together the whipping cream, milk, vanilla, and chocolate chips in a crock pot.
Cover and cook on low for 2 hours, stirring occasionally, until mixture is hot and chocolate chips are melted. Stir again before serving. Garnish as desired.

Slow Cooker Caramel Apple Cider
Serves 12

Ingredients
12 cups of apple juice – I bought a gallon and had a little leftover
6 cinnamon sticks
1/2 cup of good quality jarred caramel sauce, plus more for drizzling
Whipped cream

Directions
Heat apple juice and cinnamon sticks in the slow cooker for about 4 hours on high. Let the cinnamon sticks soften and uncurl. Before serving, stir in 1/2 cup of caramel sauce and serve in heat proof cups. Top with whipped cream and a drizzle of caramel.

Homemade Taco Seasoning

Recently I have seen a few different recipes for making your own taco seasoning. I thought this one was pretty easy, as it leaves the total amount up to you. Whether you want to make alot or a little.
If you start with a Tablespoon measurement it works out pretty easy. So go ahead and double or triple that and you have already saved yourself time and money.

Homemade Taco Seasoning

Ingredients

  • 1 part chili powder
  • 1 part ground cumin
  • 1 part garlic powder
  • 1 part onion powder
  • 1/4 – 1/2 part crushed red pepper

Directions

  1. Mix all the spices together and store in an airtight container.

Homemade Bisquick

Would you like to make this,

Homemade Bisquick
Serves: 1 Box
Ingredients
  • 3 1/4 cups unsifted all-purpose flour
  • 1/2 cup sugar
  • 1 cup nonfat dry milk powder
  • 1/2 cup cornstarch
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons salt
Instructions
  1. Mix all the ingredients together well.
     2. Use in place of Bisquick.

Who Knew?!

Baking Soda is a chemical compound that appears as a fine powder. It releases bubbles of carbon dioxide when it interacts with an acid and a liquid.The following are 75 uses for baking soda.

1. Use it as an antacid.
2. Use it as underarm deodorant by applying it with a powder puff.
3. Mix half a teaspoon with peroxide paste and use it as toothpaste.
4. Use it as a face and body scrub.
5. Add a cup to bathwater to soften your skin.
6. Relieve skin itch from insect bites and pain from sunburn.
7. Remove strong odors from your hands by rubbing them with baking soda and water.
8. Put two tablespoons in your baby’s bathwater to help relieve diaper rash.

Powdered Milk Tips and Tricks


The other day when I started to make dinner, I found that I didn't have any evaporated milk that the recipe called for. NO Worries! I had remembered printing off a recipe and taping it to the inside of one of my cabinet doors for an easy reference in a time like this.
Actually it was because of this recipe that I had decided NOT to stock up on it when I went shopping. Why, when I already had all of the ingredients on hand!

Evaporated Milk
(12 ounce can)
 1 1/2 Cups water
1/2 Cup + 1 Tablespoon dry Powdered Milk

Mix well.

In case you find yourself in a bind when you don't have a can of Sweetened Condensed Milk...
Try this. I have and it works perfectly.

Sweetened Condensed Milk
(14 ounce can)
1/2 Cup Hot water
1 Cup dry Powdered Milk
1 cup Sugar
1 Tablespoon Butter

Blend Well.

I have also found myself needing just a little buttermilk for a recipe and didn't want to drop everything and run to the store. I am sure you all know this trick. But here it is anyway.

Buttermilk

Add a tablespoon of lemon juice or white vinegar to a cup of milk and let it stand for 5 to 10 minutes.


Ever needed just a cup or 2 of milk and you were totally out?! Or planned to save the last of the jug for your nightly or morning bowl of cereal before going shopping again?
Try this. Trust me, if you are using it in a recipe, you will never know the difference.

MILK

To Make 1 cup of milk.....1 cup water.....3 Tablespoons Dry Powdered Milk
                3/4 cup.....3/4 cup water.....2 1/4 Tablespoons Dry Powdered Milk
                2/3 cup.....2/3 cup water.....2 Tablespoons Dry Powdered Milk
                1/2 cup.....1/2 cup water.....1 1/2 Tablespoons Dry Powdered Milk
                1/3 cup.....1/3 cup water.....1 Tablespoon Dry Powdered Milk
                1/4 cup.....1/4 cup water.....3/4 Tablespoon Dry Powdered Milk

See, there are plenty of uses for your Powdered Milk with out getting those funny faces from the kids.
Try it in your baking/cooking recipes and they will never know.

Time out for YOU

Dried Apricots (or fresh since they are in season)
Powdered milk
Water

Apricot Mask
Ingredients:
1 cup dried Apricots
3 Tablespoons powdered milk
1/4-1/2 cup water (plus more for softening apricots)
Directions for making mask:
Soften dried apricots in a bowl of warm water for several minutes. Remove from water. Combine apricots and powdered milk in a blender. Gradually add 1/4 cup water. Blend until the mixture has a smooth consistency; add more water if needed. Store unused mask in the refrigerator.
Directions for using mask:
Apply apricot mask evenly to face, avoiding the eye area. Leave on for 15-20 minutes. Wipe off with a soft damp cloth.
