The other day when I started to make dinner, I found that I didn't have any evaporated milk that the recipe called for. NO Worries! I had remembered printing off a recipe and taping it to the inside of one of my cabinet doors for an easy reference in a time like this.
Actually it was because of this recipe that I had decided NOT to stock up on it when I went shopping. Why, when I already had all of the ingredients on hand!
Evaporated Milk
(12 ounce can)1 1/2 Cups water
1/2 Cup + 1 Tablespoon dry Powdered
Milk
Mix well.

In case you find yourself in a bind when you don't have a can of Sweetened Condensed Milk...
Try this. I have and it works perfectly.
Sweetened Condensed Milk
(14 ounce can)
1/2 Cup Hot water
1 Cup dry Powdered Milk
1 cup Sugar
1 Tablespoon Butter
Blend Well.

I have also found myself needing just a little buttermilk for a recipe and didn't want to drop everything and run to the store. I am sure you all know this trick. But here it is anyway.
Buttermilk
Add a tablespoon of lemon juice or white vinegar to a cup of milk and let it stand for 5 to 10 minutes.
Ever needed just a cup or 2 of milk and you were totally out?! Or planned to save the last of the jug for your nightly or morning bowl of cereal before going shopping again?
Try this. Trust me, if you are using it in a recipe, you will never know the difference.
MILK
To Make 1 cup of milk.....1 cup water.....3 Tablespoons Dry Powdered Milk
3/4 cup.....3/4 cup water.....2 1/4 Tablespoons Dry Powdered Milk
2/3 cup.....2/3 cup water.....2 Tablespoons Dry Powdered Milk
1/2 cup.....1/2 cup water.....1 1/2 Tablespoons Dry Powdered Milk
1/3 cup.....1/3 cup water.....1 Tablespoon Dry Powdered Milk
1/4 cup.....1/4 cup water.....3/4 Tablespoon Dry Powdered Milk
See, there are plenty of uses for your Powdered Milk with out getting those funny faces from the kids.
Try it in your baking/cooking recipes and they will never know.
